Slice of apricot tart

Eve Meal
Beetroot and Lamb Risotto
Sautee an onion
Add risotto rice
Add stock slowly (beetroot soup (from Saturday) watered down – ¼ soup to ¾ vegetable stock)
Add 6 mushrooms (quartered)
Add lamb (from Sunday)
Add chopped asparagus
Warm through and serve
Pros – breakfast
Cons – too much red meat

That looks an interesting and tasty recipe, but in all honesty the colour of the dish would put me off serving it to friends - short of taking out the beetroot (which I guess defeats the purpose) have you come across any way of making the dish a bit more presentable?
